1. Tropical Garlic Shrimp

What do you need:

  • 12-15 pieces of large tiger shrimp, peeled and deveined

  • 1/4 cup olive oil

  • 2 tablespoons of tequila

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon cajun seasoning

  • 1 teaspoon salt

  • 1 teaspoon garlic powder

  • 1/2 teaspoon ground black pepper

  • 4 wooden skewers previously soaked in water

  • 2-3 slices of fresh lemon (optional)

In a large bowl, combine olive oil, tequila, lime juice, Cajun seasoning, salt, garlic powder, and black pepper. Beat until all the ingredients are well mixed. To marinate in a large zip-top plastic bag. Place the shrimp in the bag and cover with the marinade. Seal and refrigerate 4 to 6 hours. When done, remove shrimp from bag, shake off excess, and discard excess marinade. Thread the shrimp onto skewers, then cook on a preheated grill over medium-high heat for 6 to 8 minutes or when the center is no longer transparent. Garnish with lemon wedges if desired.

What do you need:

  • 1/4 kilo salmon fillet with skin

  • 1/4 cup mayonnaise

  • 1 tablespoon fresh dill

  • 2 teaspoons Dijon mustard

  • 1 teaspoon vegetable oil

  • 3 pinches of brown sugar

Combine mayonnaise, dill, and Dijon mustard in a medium bowl and mix well until ingredients are well blended. Set aside.
